Paolo

Paolo (he/him) is the first chef to step through the virtual doors of The Banquet Hall.

College introduced me to a lot of great people, and a lot of great things. If I can humor you with a quick story, we had weekly farmer’s markets at UCSD and quarterly vendor fairs. I remember seeing this cookie business, and they had these purple cookies. I tried it, and never tried it again because it wasn’t that special to me. None of that is true about Paolo’s Ube Cookies. Hands down the best ube cookies in the world.

Pao and I go back to first quarter first year at UCSD, and over the last several years, we have continuously grown closer with each other. Our conversation on the podcast contains many gems of stories, from bubble baths to Bird House.
